If you have kids, they can help too! Put them to work by having them wash your zucchini. You can load the squash into the spiralizer for them (especially since it has a pretty sharp blade!) and the kids can have fun cranking the handle while zucchini noodles are freshly made! Warm a large frying pan with a tablespoon of olive oil. Toss your zucchini noodles in bowl with pesto and 1/2 teaspoon of salt per three spiralized zucchinis (more salt is needed if you are cooking a larger quantity). Throw your noodles in the pan and cook until tender, approximately 2-3 minutes! Add some color by throwing in a few cherry tomatoes in!
1-2 Zucchini per person (I generally recommend spiralizing one medium zucchini per child, and one large or two medium zucchinis for adults)
Pesto (store-bought is fine, or make your own pesto with a fresh bunch of Blue Sky Basil! Recipe idea below*…)
Table Salt (1/2 teaspoon of salt per three spiralized zucchinis)
Tablespoon of olive oil
Want to change it up? Add some red pepper flakes, lemon, or use wild arugula in your pesto instead of basil!
